This week we were invited to see a demonstration of the Pratica FIT. It has some very unique features for High Speed Ovens that we are very excited about.

Our friends at FEM are now the importers for the Pratica FIT range of high speed ovens. Originally from Brazil, the Pratica has become the No.1 choice of high speed ovens in South America.

Hiring out one of the demonstration rooms at Parts Town in Cannock, we were very well fed by the FEM team. They cooked off the classics – toasties, panini and bagels but were keen to show us some clever tricks.

Cooking Protein

Whenever we sell a high speed oven, one of the first things we mention is DO NOT COOK RAW MEAT(!) as this blocks the catalytic converter. However the Pratica FIT ovens have a removable catalytic converter. This is cleaned each day as part of the cool down procedure. One cost benefit of buying raw meat is that is cheaper than cooked meat which can really help with gross margins – something chefs are always looking at.  Burgers were cooking in 2 minutes and chicken thighs were cooking in just over 2 minutes.

Panini Press

The optional panini press for the Pratica FIT range operates in a similar manner to Merrychef and UNOX but we do like the little lip at the end of the panini plate which stops melted cheese from sliding down the back of the oven. No-one is ever happy when they’re on cleaning duty dealing with that!

Menu & Programming

The Pratica FIT works alongside the ‘IOK” software which makes it very easy to add / remove / edit cook programmes on the oven. Up to 1024 programmes can be installed. The software is both Apple & Android compatible.

Energy Use

The oven warms up and cools down in under 15 minutes, furthermore the oven is very well insulated. When we felt the outside of the oven and the door panel it could be described as mildly hot at best. For anyone who has got the ‘arm marks’ of a hot oven this is winner!
