During a recent visit to Eataly at Schiphol Airport, I spotted the UNOX Speed Pro being used in a busy premium travel food environment. It’s always interesting seeing which high-speed ovens major operators trust in real-world, high-volume locations, particularly in airports where speed, consistency and food quality are all critical.

Eataly is known for premium Italian food, fresh ingredients and theatre-style foodservice, so seeing the UNOX Speed Pro operating within the concept was particularly interesting. The location combines fresh pizza, bakery products, sandwiches and coffee within a compact but high-footfall environment, making efficient kitchen equipment essential behind the scenes.
