It’s #ToastieTuesday time and this week it’s a meaty monster! Use pre-cooked brisket pouches and pre-weighed pots of onions and blue cheese to streamline prep. This toastie works brilliantly as a premium menu addition, especially in cafes!
100g slow-cooked pulled beef brisket (pre-portioned)
25g caramelised onions
50g crumbled blue cheese
2 slices of sourdough bread
Butter or release spray (optional for extra colour)
Get 1 slice of sourdough and layer the base with pulled beef brisket.
Add caramelized onions evenly across the beef.
Top with blue cheese, ensuring good coverage.
Place the top half of the sourdough bread on top .
If desired, lightly spray the top with oil or butter for a golden finish.
Oven: Merrychef Connex12 or Lincat CIBO+
Settings (example – adjust to suit):
Time: 55–65 seconds
Temp: 275°C
Microwave: 100%
Fan: 40%
Cook until roll is crisp, filling is hot, and cheese is melted. You may need to add a stage 2 (Merrychef only) and flip the Toastie over.
