The King’s Head in Carlisle is using the Lincat CIBO+ to speed up service and expand the menu range dramatically
Mike Vose, Landlord of The King’s Head in Carlisle is an experienced pub operator who has built up decades of knowledge within the industry. He knew he needed to speed up service in the kitchen and with rising staff costs, looked to new equipment instead to bring new efficiencies to his kitchen.
Mike is what we’d call a ‘proper foodie’ and knows his stuff. When he got in touch with us to ask about ovens that would be suitable to help speed up service he had already built up a great knowledge of the high speed oven market.
Deciding on the Lincat CIBO+
Pies are a key part of the menu at The King’s Head. A 6 deck Combi Oven is in place for batch cooking but it isn’t great for quickly re-heating portions. The Lincat CIBO+ uses a combination of impingement, microwave and heated ceramic base to quickly re-heat the pie. The heated base element in particular helps to achieve a great crispy crust.
Mike is also using his high speed oven for much more than just toasties. “We are re-heating our sausages, wings and jacket potatoes. One customer told me it was the best jacket potato he’d ever had!”
Looking to the future Mike will be expanding his menu to include more slow cooked meat options. We tried some delicious pulled pork and smoked wings: both tasted incredible following a quick re-heat in the oven. This combination will give Mike a really versatile menu with a great range of appetisers and main dish menu items.
